Rabbit food? No I mean salad! Black bean and cilantro on iceberg.

It’s moving back and forth between rain and sun a little too much for me this Spring. I keep hoping that hot and sunny summer the cold and snowy winter promised is on its way!

None the less, it is salad season. Well for me it’s always salad season. Growing up in California salad is a daily part of every meal. At least in my house it was. Dinner without a cold salad is just not right some how. If I have to fore-go the salad I leave the table feeling heavy and sodden from all the hot cooked food. The Man on the other hand would die with a smile on his face if he never had to eat cold again.

Salad is as flexible as you want it to be. It can be healthy, meaty, fatty, lean or green. It can also be fruity, spicy, sweet or sour.

So over the summer I will be introducing some of my salad concoctions as I come up with them. I will also be teaching you how to make an authentic Cesar salad, a California original. Mmmm if you ever go to San Fransisco make sure you try two things the Cesar salad and the clam chowder served in a sour dough bread bowl.

After my detox I have been trying to keep the plate filled with greens. This is one of my newest favorites.

Black bean and cilantro on iceberg.

Iceberg often gets a bad rap. The problem is that if it sits on the shelf too long it will start to develop a bitter flavor. Fresh iceberg is really sweet and crispy. When choosing a iceberg look for a solid, hard to the squeeze, heavy head. Don’t use a knife to cut it. The metal knife will cause the lettuce to rust prematurely. Just break it into bite size piece with your hands. This applies to all salad types.

Black Bean and cilantro on iceberg lettuce serves 2

Ingredients

1/4 Head of iceberg lettuce you can substitute with whatever lettuce you have at home.

1-2 dl Black beans the type that are already prepared in the can. Freshly boiled is better, but that requires lots of thinking ahead.

1 Tomato cut into wedges

1/2 of a Cucumber sliced and halved

1-2 TBS Sour cream/gräddfil

1 TBS Olive oil

Squeeze of lemon

Small handful of cilantro optional, you an substitute with a whatever herb you prefer basil, parsley, mint…

Salt to taste

Directions

With your hands break the lettuce into bite size pieces, cut up your cucumber and tomatoes and toss with the lettuce. Drizzle the olive oil over the top along with the lemon squeeze. Then add dollops of sour cream, the black beans and cilantro. The cilantro is a really nice compliment to the black beans.

Salt to taste or not.

You know have a well balanced salad you can have on its own or along with your meal.

Feel free to add other tings to the mix, boiled egg, bacon, sunflower seeds…
